Steve joins the Mustangs from the Utah Wolves AA and AAA programs in Salt Lake City, UT where he was an assistant coach for one season. In the lone season with the Wolves, the AA program finished the season as the 33rd ranked team in the country. Prior to joining the Wolves, Soto had served as an assistant coach for the West Coast Renegades AAA. His head coaching resume boasts stints with the Utah Golden Eagles 14U and Weber State University. Soto was with the Weber State program from 2007-2011and in one of the seasons, the team finished 15th in the nation in the ACHA DII. He is also served as the coaching director of the Davis County Youth Hockey Association (DCYHA).

Soto's playing career also saw him compete in the Western States Hockey League during his Junior career. He played for both the Alaska Sinbad Sailors and the Flagstaff Mountaineers. His hockey career eventually led him to Ogden and joined the Weber State University program where he played all four years of college and then eventually residing in the Greater Salt Lake area from then on.

Soto grew up and began playing hockey in Southern California before leaving to play Juniors. He now lives in Farmington, UT with his two daughters Taygen and Cambria.
